Over the years many people have asked me, “how do manage to stay so thin?”. First of all I have to thank God for my parents for instilling good eating habits I enjoy now. Being a good steward over God’s creation is very important. As believers we all should play a role in protecting it. Likewise, deciding to eat green is even better for your overall health. Eating green is brain food, cancer prevention, it is jam packed with vitamins, minerals & antioxidants. Instead of throwing your money away at the pharmacy, invest in the best preventive medicine God created… vegetables! “Dear friend, I pray that you may enjoy good health and that all may go well with you, even as your soul is getting along well.” -3 John 1:2

In this pic: Chopped egg plant (soak in bowl with lemon to prevent browning), bell pepper, cabbage, spinach & parsley. See what you come up with! You can cucumbers, avocado .. the list goes on. Toss together lightly with your favorite dressing & enjoy!

Dinner gets as complicated as you allow it to be. God doesn’t want us to be worrying about what we will eat or drink. He has already provided that for you. Start by looking in the fridge and working with what you have. Be thankful and let God instruct you on how to nourish your body today. “Therefore I tell you, do not worry about your life, what you will eat or drink; or about your body, what you will wear. Is not life more than food, and the body more than clothes?”

In this pic: I made an omelette. I sauteed & lightly

seasoned as many veggies I could find in my fridge (celery, orange/green peppers, onion & cabbage). Than whipped up 2 eggs and covered in low heat. This made plenty for 2 sevings. Add a ruby red grapefruit and it’s a breakfast champions! Enjoy!!

Short cuts don’t always have good results. Especially when we talk about food. For example let’s examine Aunt Jemima’s buttermilk complete pancakes & waffle mix. Here are some interesting ingredients… thiamin mononitrate, sodium bicarbonate, sodium aluminum phosphate, monocalcium phosphate, sodium caseinate, lactic acid… just to name a few. Who doesn’t like pancakes?… It doesn’t have to feel so bad to eat a pancake. Especially when you incorporate healthy ingredients 🙂 “Prove all things; hold fast that which is good.” -1 Thessalonians 5:21

In this pic: First, in a coffee grinder I grind up old fashion oatmeal & have plenty stored away. To make pancakes use half your usual measure of pancake mix and substitute rest with ground oat powder. Enjoy with fruit instead of syrup 🙂

It’s dinner time!! – 11.6.12

It doesn’t have to be complicated and fancy… just get creative! If you need help in this area just ask God to help you as you lean into the fridge, take a deep breath and get to it. “Blessed are those who hunger and thirst for righteousness, for they will be filled.” -Matthew 5:6

It’s a spaghetti kind of night!! – 10.29.12

Why not making your own HEALTHY sauce! Avoid the unnecessary corn syrup and control the sodium you and the family take in. “For you were bought with a price. So glorify God in your body.” -1 Corinthians 6:20

In this pic: In a blender tomato, carrots, onions, cilantro, garlic, water and your choice of seasoning for taste (you may add bell pepper). I usually make this with chicken. Yummi! 🙂

Breakfast anyone? – 10.23.12

Here is a easy healthy breakfast option, Cream of Wheat. With a bowl you get folate, fiber, healthy carbs, iron, selenium, B vitamins, thiamin, niacin, vitamin B-6 and low carbs. Don’t forget about your protein! Have some yogurt, eggs or slices of turkey/Canadian bacon. “Beloved, I wish above all things that thou mayest prosper and be in health, even as thy soul prospereth.” -3 John 1:2

How about a meal that is easy, healthy and less than 30 minutes away!! – 10.17.12

Remember portion control is important. Listen to your body and stop when your satisfied, not stuffed. “These shall ye eat of all that are in the waters: whatsoever hath fins and scales in the waters, in the seas, and in the rivers, them shall ye eat.” -Leviticus 11:9

In this picture: tilapia x 2, 1/3 cup unsalted white rice, and plenty mixed plain veggies.Served with a refreshing glass of ice cold water lol…

Healthy substitute? – 10.13.12

Here is one… instead of pouring high fructose corn syrup, sorbitol acid, sodium benzoate & sulfur dioxide over your pancakes. Grab a handful of blueberries high in anti-oxidants and so much more. We “can” live healthier and live longer. What’s your choice? “The Lord will guide you always; He will satisfy your needs…and will strengthen your frame. You will be like a well-watered garden, like a spring whose waters never fail.” -Isaiah 58:11



Got a sugar craving!! – 10.11.12

Instead of heading for your next sugar rush which will increase inflammation to your body. Get creative and use your blender. Today’s healthy sugar rush is ripe sweet frozen mango and frozen strawberry smoothy.

**helpful hints: freezing your fruit makes it easy to fix up your next frozen treat. Be prepared when you get a snack attack ;)**

Breakfast is the most important meal!!! – 9.28.12

Consuming high proteins during breakfast can provide adequate supply for one day.

DID YOU KNOW: Peaches are the second high protein fruit to include in your diet. One large, raw peach provides 2 grams of protein. Peaches are also high in other nutrients like vitamin C, vitamin A and fiber.

“Do you not know that your bodies are temples of the Holy Spirit, who is in you, whom you have received from God? You are not your own; you were bought at a price. Therefore honor God with your bodies.” -1 Corinthians 6:19-20

What’s for dinner? – 9.25.12

Remember use your food as medicine. Plan out your meals. This will save you time, money and energy! Our bad eating habits start when we are starving, unprepared and on the hunt for our next meal! You can do it!! “I can do all things through Christ which strengtheneth me.” -Philippians 4:13

20min meal: white rice no salt added, carrots/cabbage steamed with little soy sauce & water covered to steam, chicken breast lightly salted… Enjoy!!

Tuna anyone? It’s lunch time! – 9.24.12

Time to make another choice that will affect how you feel for the rest of the day & build habits for the rest of your life 🙂

Refreshing avocado salad!! – 9.12.12

What are you eating today? “And God said, “Look! I have given you the seed-bearing plants throughout the earth and all the fruit trees for your food.”” -Genesis 1:29 **healthy eats**…

Ingredients: sweet corn, Tomatoes (cherry, grape, or pear tomatoes), 1 avocado, halved, pitted, peeled, and diced, scallions, thinly sliced (I used onions all I had) fresh lime juice (I used 2 lemons), cucumbers, salt and ground pepper, *1 tablespoon vegetable oil or sunflower (I did without the oil). Dice/cut and mix together and enjoy! I served it on a bed of lettuce. Taste great the next day! Enjoy!!!


Torta de tilapia con ensevollado! – 7.28.12

THANK YOU God for what you have provided & inspired in me to create.

In this pic: My father had some left over tilapia… yum! Found some french bread. Began to chop up some tomatoes and onions, squeezed some lemon & salt to taste to make the salad (ensevollado). Spread mayo over bread, placed fish and layered “ensevollado” on top and at the rest was history. It was absolutely delish!!! “Give us this day our daily bread.” -Matthew 6:11 … **healthy eats**
